Kid's Paella
- 2 each bacon rashers, coarsely chopped
- 500 grams chicken drumettes
- 1/2 cup arborio (short-grain) rice or Spanish rice
- 1 each sweet red bell peppers red, finely chopped
- 1 litre chicken broth
- 1 pinch saffron threads
- 1/2 cup peas, frozen
- 1 x mayonnaise whole egg to serve
- Heat a large oiled frying pan over a medium heat.
- Cook chicken for about 10 minutes or until golden brown and just cooked through.
- Add bacon and cook for 2 minutes or until crisp.
- Stir in rice, then stock and saffron.
- Bring to boil and then simmer uncovered, without stirring for about 12 minutes or until rice has just softened.
- Sprinkle peas over rice for last 2 minutes of cooking time.
- Serve topped with a dollop of mayonnaise, if desired.
