Kid's Paella

  1. Heat a large oiled frying pan over a medium heat.
  2. Cook chicken for about 10 minutes or until golden brown and just cooked through.
  3. Add bacon and cook for 2 minutes or until crisp.
  4. Stir in rice, then stock and saffron.
  5. Bring to boil and then simmer uncovered, without stirring for about 12 minutes or until rice has just softened.
  6. Sprinkle peas over rice for last 2 minutes of cooking time.
  7. Serve topped with a dollop of mayonnaise, if desired.
