Grilled stuffed tacos
- 1 lb ground beef
- 1/2 lb shredded cheese (i use pepperjack)
- 1 can refried beans
- 1 can nacho cheese
- 1 box hard taco shells
- 1 large flour tortillas
- Brown beef in skillet, drain grease.
- Add taco seasoning packet and water as directed on seasoning packet.
- Heat refried beans in small pan on medium heat, stirring frequently.
- Add a splash of water if they are too dry.
- Heat nacho cheese in small pan on medium heat, stirring frequently.
- Chop up your lettuce and tomatoes and set aside.
- Heat a large skillet to medium.
- Before building each taco, heat flour tortilla in pan until its warm and easy to work with.
- Put a large spoon full of refried beans in center of tortilla.
- Next put a good spoon full of nacho cheese on top of your beans.
- Fill a hard taco shell half way full with your taco meat, stick it in your bean/nacho cheese mixture in the standing up position and snap it in half so it is now a little circle in the middle of your tortilla.
- Add your lettuce, tomato, shredded cheese, hot sauce and sour cream to taste.
- Roll it up into into a burrito
- Grill both sides until golden brown.
