Black-Eyed Pea Salad
- 3/4 cup oil
- 1/4 cup sugar
- 1/4 cup balsamic vinegar
- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 1 bell pepper, diced
- 1/2 cup diced green onions
- 1 large tomato, diced
- 1 red bell pepper, diced
- 1/4 cup freshly chopped parsley leaves
- 3 tablespoons freshly chopped thyme and oregano leaves mixed
- In a small bowl, whisk together the oil, sugar and vinegar.
- In a large bowl mix together the remaining ingredients.
- Pour dressing on top of salad and mix well.
