Lentil, Kale and Chorizo Soup

  1. Rinse lentils at least 3 times until water runs clear.
  2. Brown Chorizo with olive oil.
  3. Add vegetables and cook until tender.
  4. Add vegetable stock, tomato paste, and rinsed lentils.
  5. Simmer for at least 90 mins until lentils are tinder.
  6. Add chopped kale and cook for another 30 mins.
