Loin of Lamb with Apple and Ginger Stuffing

  1. First make the stuffing.
  2. Peel and core the apples, slice thinly and put into a saucepan with the lemon juice, sugar and ginger.
  3. Cook over a gentle heat until the apples are just soft, then set aside to cool.
  4. Preheat the oven for 400F (200C).
  5. Trim the lamb, remove the skin and score the fat.
  6. Lay the joint out on a board, fat side down.
  7. Spoon the apple mixture along the center.
  8. Roll up and tie with twine.
  9. Peel the garlic and cut it into slivers.
  10. Cook until done.
