Tomato, Lentil and Orange Soup

  1. Cook the onion in butter for 10 minutes without colouring.
  2. Grate the zest of the orange, peel it and chop (removing seeds).
  3. Add the garlic/orange and zest.
  4. Stir in tomatoes, lentils and stock.
  5. Bring to the boil, then reduce heat and simmer for 20 mins.
  6. Puree and season.
  7. Serve with mint and zest.
