Chile Con Queso
- 2 tablespoons vegetable oil
- 1 large onion, peeled and chopped
- 1 lb Velveeta cheese
- 1 lb sharp cheddar cheese, grated
- 2 cups hot salsa
- 1 tablespoon ground cumin
- 4 ounces green chilies, chopped
- 1 large corn chips or 1 large tortilla chips, for accompaniment
- In a large skillet over medium heat, warm the oil.
- Add the onion and saute until translucent.
- Add the cheeses, salsa, cumin, and chilies.
- Stir to combine, making sure that the cheeses are well blended and completely melted.
- To serve, transfer the chile to a fondue pot with a candle to keep the chile warm.
- Serve with the chips.
- This dish freezes very well (if you have any leftovers).
