English Pea Casserole
- 1/2 c. chopped onion
- 1 small sweet red pepper, chopped
- 1 Tbsp. margarine, melted
- 1 (5 oz.) pkg. medium egg noodles
- 1 (8 oz.) pkg. cream cheese, cubed and softened
- 2 c. (8 oz.) shredded sharp Cheddar cheese
- 1 (10 oz.) pkg. frozen English peas, thawed and drained
- 1 (2 1/2 oz.) jar sliced mushrooms, undrained
- 1/2 tsp. ground white pepper
- 10 round buttery crackers, crushed
- Saute onion and red pepper in butter until tender.
- Cook noodles according to package directions; drain.
- Add cheeses to hot noodles; stir until cheese melts.
- Stir in onion mixture, peas, mushrooms and pepper.
- Spoon into a greased 10 x 6 x 2-inch baking dish.
- Top with crumbs.
- Bake at 325u0b0 for 20 to 30 minutes. Yield:
- 8 servings.
