Mint Chocolate Candy Cheesecake
- 1 cup chocolate wafer crumbs
- 3 tablespoons margarine melted
- 3 packages cream cheese softened, 8 ounces each
- 23 cup sugar
- 3 large eggs
- 6 ounce chocolate, semisweet
- 1/2 cup creme de menthe chopped
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- BODY: Combine crumbs and margarine; press onto bottom of 9-inch springform pan.
- Bake at 350F (180C) F, 10 minutes.
- BODY: Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
- Add eggs, one at a time, mixing well after each addition.
- Blend in chocolate, mint wafers, sour cream and vanilla; pour over crust.
- Bake at 350F (180C) F, 50 minutes.
- Loosen cake from rim of pan; cool before removing rim of pan.
- Chill.
- Garnish with additional mint wafers, if desired.
