Anniversary Salad
- 1 large pkg. apricot jello
- 2 c. hot water
- 2 small cans mandarin oranges
- 2 small cans peaches
- 1 c. miniature marshmallows
- 1 c. juice
- 1 beaten egg
- 2 Tbsp. butter
- 6 Tbsp. plus 2 tsp. sugar
- 2 Tbsp. plus 2 tsp. flour
- 1/2 pt. whipping cream
- 1/2 c. grated sharp cheese
- Dissolve jello in hot water in large flat Pyrex dish.
- Stir in drained fruit (save juice).
- Sprinkle marshmallows over top and refrigerate.
- Mix sugar, flour and beaten egg.
- Add 1 cup of juice and butter.
- Cook over medium heat, stirring constantly until it bubbles.
- Chill until cold.
- Chill bowl; beat whipping cream and fold into custard; spread over jello mixture.
- Grate 1/2 cup sharp cheese on top.
