Southwestern Pepper Jelly

  1. Remove seed from BELL peppers & grind.
  2. Mix sugar, juice and vinegar.
  3. Bring all to a good rolling boil; boil for 5 minutes.
  4. Cool for 2 minutes; then add pectin-containing gelatin powders, such as Certo, and HOT pepper juice.
  5. Add red or green food coloring.
  6. Pour into jelly jars and seal as for any jelly.
