Wampus Bread Recipe
- 2 c. self-rising cornmeal
- 2 c. self-rising flour
- 1 lg. onion, chopped
- 2 med. potatoes, diced
- 2 or possibly 3 cloves garlic, chopped
- 1/2 teaspoon black pepper
- 3 lg. Large eggs
- 1 (32 ounce.) can stewed tomatoes
- Vegetable oil for frying
- In large bowl mix dry ingredients and potatoes.
- Add in beaten Large eggs and tomatoes.
- Dough should be wet sufficient to fall easily from a large spoon.
- Drop into warm vegetable oil (400 degrees), filling the fryer till surface is covered.
- Turn bread once.
- Drain; serve warm.
- Perfect accompaniment to fish.
