Scalloped Potato Casserole Recipe
- 4 to 6 med. potatoes
- 1 sm. onion
- 2 tbsp. butter
- 1/4 c. lowfat milk
- 2 tbsp. flour
- 1/4 pound ham
- Salt and pepper to taste
- Large casserole dish
- Chop onion, slice potatoes and cube ham (1/4 inch cubes).
- Butter casserole dish and place 1/3 of the potatoes in the bottom of the dish.
- Salt and pepper and spread a Tbsp.
- of flour over them.
- Scatter 1/2 the onions and ham and put dots of butter around the potatoes.
- Make a second layer the same as the first and then top it off with the last 1/3 of the potatoes and pour the lowfat milk over the top.
- Cover the dish and bake in a 425 degree oven for 45 to 50 min with it uncovered the last 15 min of baking.
- Will feed four.
- Variations: Leave out the ham and place four seasoned pork chops on the top after adding lowfat milk.
- Use skim lowfat milk, turkey ham and butter buds vice whole lowfat milk, pork ham and butter.
