Toffee Bits Shortbreads
- 2 cups butter, at room temperature
- 1 cup firmly packed brown sugar
- 1 teaspoon vanilla
- 3 cups flour
- 1 cup whole wheat flour
- 1 cup butter toffee pieces (available at bulk food stores)
- In a large bowl, cream together butter, brown sugar and vanilla until fluffy.
- With a wooden spoon or by hand, gradually mix in flours and toffee bits.
- Shape mixtures into 1 1/4 inch balls.
- Flatten balls into 1/4 inch thick rounds.
- Place on ungreased baking sheets, about 2-inches apart.
- Bake at 350F on top oven rack for 10-12 minutes, or until just starting to lightly brown, Remove from oven and let cool 10 minutes before removing to wire racks to cool completely.
