Toffee Bits Shortbreads

  1. In a large bowl, cream together butter, brown sugar and vanilla until fluffy.
  2. With a wooden spoon or by hand, gradually mix in flours and toffee bits.
  3. Shape mixtures into 1 1/4 inch balls.
  4. Flatten balls into 1/4 inch thick rounds.
  5. Place on ungreased baking sheets, about 2-inches apart.
  6. Bake at 350F on top oven rack for 10-12 minutes, or until just starting to lightly brown, Remove from oven and let cool 10 minutes before removing to wire racks to cool completely.
