Wheat Germ Zucchini Nut Bread Recipe
- 3 Large eggs
- 1 c. salad oil
- 1 c. granulated sugar
- 1 c. brown sugar, firmly packed
- 3 teaspoon maple flavoring
- 2 c. coarsely shredded zucchini
- 2 1/2 c. unsifted flour
- 1/2 c. wheat germ
- 1/2 teaspoon baking pwdr
- 2 teaspoon each soda and salt
- 1 c. finely minced walnuts
- 1/3 c. sesame seeds
- With mixer, beat Large eggs to blend.
- Add in oil, sugars, and maple flavoring.
- Beat till mix is thick and foamy.
- Using spoon, stir in zucchini.
- Combine flour, wheat germ, soda, salt, baking pwdr, and walnuts.
- Stir gently into zucchini mix just till blended.
- Divide pans.
- Sprinkle sesame seeds proportionately over tops of each.
- Bake in a 350 degree oven for 1 hour or possibly till wooden pick comes out clean.
- Cold in pan 10 min.
- Turn out on wire racks.
- Cold thoroughly.
- Makes 2 loaves.
