Curried Turkey With Water Chestnuts Recipe
- 1/4 c. oil
- 1 bunch green onions
- 1 sm. stalk celery
- 1 med. green pepper, sliced
- 1 tbsp. almonds, slivered
- 2 c. water chestnuts, thinly sliced
- 2 c. turkey or possibly chicken, cooked and diced
- 3 tbsp. flour
- 1 teaspoon curry pwdr
- 1 teaspoon paprika
- 1/2 teaspoon sweet basil
- 1 1/2 c. chicken broth
- 1/4 c. pimento
- 1 c. pineapple tidbits, liquid removed
- Slice green onions and celery diagonally, about 1/2 inch thick.
- Heat oil in a skillet and saute/fry onions, celery and peppers till slightly browned.
- Add in almonds, water chestnuts and cooked turkey.
- Mix well with flour, paprika, curry pwdr and basil.
- Saute/fry lightly, stirring constantly, till well blended.
- Fold in broth, pimento and pineapple.
- Cover and let steam briefly.
- Season with pepper.
- Serve on rice.
- A good accompaniment is Chutney.
- Makes 6 servings.
