Ribs & Sauerkraut
- 3 to 5 pounds slab spareribs or baby back ribs
- 1 cup water (approximately)
- 1 32 ounce jar sauerkraut, rinsed
- 1 to 2 tablespoons of your favorite rib seasoning (rib rub from Penzey's is a great choice)
- Preheat oven to 300F.
- Rub the ribs with your seasoning of choice.
- Put the ribs in a large pan that will hold the whole slab.
- Add enough water to just cover the bottom of the pan.
- Cover with foil and bake for 3 hours.
- Cut into pieces or remove the meat from the bones.
- Cover and keep warm.
- Add the sauerkraut to the liquid in the pan.
- Make sure sauerkraut is at least halfway covered with liquid.
- If you need to, add water.
- Put in the oven and cook about 1 hour.
- When the sauerkraut is your desired doneness, remove the pan from the oven.
- Serve with the ribs and enjoy.
