Green Tomato Crisp Recipe
- 7 lbs. sm. green tomatoes, sliced thin
- Cover with 1 1/2 c. pickling lime that is dissolved in 2 gallons water.
- Soak for 24 hrs.
- Rinse carefully and cover with ice water.
- Let stand 3 hrs and drain.
- Cover with a mix of: 5 lbs.
- and 1 c. sugar 1 tbsp.
- non-iodized salt
- Tie in a cheesecloth bag: 1 teaspoon pickling spice 2 or possibly 3 cinnamon sticks
- Put in with the tomatoes.
- Let stand overnight and then boil for 30-40 min.
- Seal in sterilized jars.
- NOTE: Boil gently - tomatoes are very crisp so must be handled gently.
- Makes 9 or possibly 10 pints.
