Green Tomato Crisp Recipe

  1. Cover with 1 1/2 c. pickling lime that is dissolved in 2 gallons water.
  2. Soak for 24 hrs.
  3. Rinse carefully and cover with ice water.
  4. Let stand 3 hrs and drain.
  5. Cover with a mix of: 5 lbs.
  6. and 1 c. sugar 1 tbsp.
  7. non-iodized salt
  8. Tie in a cheesecloth bag: 1 teaspoon pickling spice 2 or possibly 3 cinnamon sticks
  9. Put in with the tomatoes.
  10. Let stand overnight and then boil for 30-40 min.
  11. Seal in sterilized jars.
  12. NOTE: Boil gently - tomatoes are very crisp so must be handled gently.
  13. Makes 9 or possibly 10 pints.
