Gingered Carrot and Quinoa Salad

  1. In a large bowl combine quinoa, carrots and green onions.
  2. In a small bowl, whisk together ginger, pepper, vinegar, oil and honey.
  3. Add to quinoa mixture and toss to coat.
  4. Season to taste with salt and pepper.
  5. Cover and refrigerate for at least 30 minutes.
  6. Serve topped with sesame seeds.
