Almond Crusted Fish Sliders

  1. Preheat oven to 350 degrees F.
  2. Bake the fish in a lightly greased baking dish till opaque and flaky, then cool.
  3. Place the patty ingredients in a food processor (or blender).
  4. Pulse until combined.
  5. Make 10-12 small patties (chill if needed).
  6. For the coating, mix together the eggs and water.
  7. Beat well.
  8. In a separate bowl, combine the almond flour with the salt.
  9. Dip the patties in the egg mixture, then coat with the almond flour.
  10. Preheat the oil in a pan over medium heat, then pan fry the patties till golden.
  11. Flip as needed.
  12. Place patties in the preheated oven to keep warm while you finish frying all the fish.
  13. This will also give them additional crispness.
  14. Alternative cooking option: Spray or coat the patties in a little oil, skip the frying and bake at 400 degrees F for about 15 minutes or till golden.
  15. Serve with shredded cabbage (even better, homemade coleslaw), thinly sliced onion, tomato and mayo wrapped in lettuce or on your favorite GF bread.
  16. We used a drinking glass to cut out slider-sized toasted bread pieces.
