Cucumber Sandwiches

  1. Cut the crusts from the bread.
  2. Spread slices with butter.
  3. Peel and seed the cucumber and chop coarsly.
  4. Sprinkle with salt.
  5. Let stand in colander for 10 minutes then pat dry.
  6. Mix with mayonnaise and tarragon amd season to taste.
  7. Spread on the bread.
  8. Cover with second slice and cut into quarters and arrange on plate.
  9. For Watercress Sandwiches substitute 1/3 cup (80 ml) chopped watercress for the
  10. cucumber, and omit the salting and draining.
