Turkey Jambalaya
- 1 cup each: chopped onion, green pepper and celery King Sooper's 1 lb For $0.99 thru 02/09
- 1 lb. spicy sausage (chorizo, andouille or Italian), cut into small chunks
- 1 tsp. oil
- 2 cans (19 fl oz/540 mL each) stewed tomatoes, undrained
- 1-1/2 cups water
- 2 cups chopped cooked turkey
- 1 Tbsp. Cajun seasoning
- 3 cups instant white rice, uncooked
- Mix onion, pepper, celery, sausage and oil in large saucepan; cook on medium-high heat 5 min.
- or until sausage is cooked through, stirring frequently.
- Add tomatoes, water, turkey and seasoning; mix well.
- Bring to boil.
- Stir in rice.
- Reduce heat to low; cover.
- Simmer 5 min.
- Remove from heat.
- Let stand, covered, 5 min.
- Mix lightly before serving.
