Barley and Edamame Salad (Ww)

  1. Bring water to a boil in a saucepan and then add the barley.
  2. Reduce heat and simmer covered for 25 minutes.
  3. Drain in a colander and rinse under cold water; drain again.
  4. Transfer to a large bowl.
  5. Stir in remainder of the ingredients and toss to combine.
  6. Serve chilled or at room temperature.
