Lamb Chops with White Bean & Cucumber Salad

  1. Heat oven to 400F.
  2. Heat 1 tsp oil in a large skillet over medium-high heat.
  3. Season the lamb with the chili powder and 1/2 tsp each salt and pepper and cook until browned, 2 to 3 minutes per side.
  4. Transfer to a rimmed baking sheet and roast to desired doneness, 4 to 6 minutes for medium-rare.
  5. Meanwhile, in a large bowl, whisk together the lemon juice, remaining 2 Tbsp oil, 1/2 tsp salt and 1/4 tsp pepper.
  6. Add the beans, cucumber and scallions and toss to combine.
  7. Fold in the cilantro and serve with the lamb.
