Del Monte Sweet & Sour Almond Chicken
- 2 Tbsp. vegetable oil
- 1/4 cup sliced almonds
- 3/4 lb. boneless, skinless chicken breasts, cut into thin strips Whole Foods 1 lb For $3.99 thru 02/09
- 3/4 cup sweet and sour sauce
- 1/4 tsp. ground ginger
- 1 can 14 oz/398 mL cut green beans, drained
- 1 can 14 oz/398 mL cut carrots, drained Target 2 lb For $3.00 thru 02/06
- 1 can 14 oz/398 mL chunky mixed fruit, drained
- 1-1/3 cups Minute Rice Brand Rice, prepare according to package directions
- Heat oil in large frypan; add almonds.
- Cook and stir over medium heat 2 minutes or until toasted.
- Remove almonds with slotted spoon; set aside.
- Add chicken to frypan.
- Cook and stir over medium-high heat 3 minutes or until chicken is no longer pink.
- Add sauce, ginger, beans, carrots and fruit; heat thoroughly.
- Serve over rice.
- Sprinkle with almonds.
