Thai-Style Stir-Fried Udon Noodles

  1. Cut the bag the udon noodles are packed in a little bit, and microwave for 30 seconds.
  2. Then, place the noodles in a sieve and rinse under running water to remove any surface stickiness.
  3. Heat some oil in a frying pan and stir-fry the garlic and ginger until they are fragrant.
  4. Add the pork and season lightly with salt and pepper.
  5. When the pork is cooked, add the thinly sliced onion and stir fry until it's transparent.
  6. Add the cherry tomatoes.
  7. Add the chives and udon noodles and stir fry.
  8. Add the fish sauce and lemon to finish.
