Broiled Figs with Oranges and Sherry Cream
- 1 cup chilled whipping cream
- 3 tablespoons golden brown sugar
- 3 tablespoons cream Sherry
- 6 oranges, peeled, white pith removed, sliced into rounds
- Chopped fresh mint
- 12 fresh figs, halved lengthwise
- Golden brown sugar
- Cream Sherry
- Whip cream with 3 tablespoons brown sugar to soft peaks.
- Add 3 tablespoons Sherry and beat to firm peaks.
- Cover and chill.
- (Can be prepared 6 hours ahead.)
- Preheat broiler.
- Arrange oranges in ring around center of each plate.
- Top with mint.
- Arrange figs cut side up in broilerproof pan.
- Sprinkle with brown sugar and Sherry.
- Broil until sugar begins to caramelize.
- Mound cream in center of each plate.
- Top with figs and serve.
