Tomato Pesto Tart

  1. Preheat oven to 400 degrees F. Spray rimmed baking sheet with cooking spray; set aside.
  2. Unfold puff pastry sheet onto lightly floured surface; roll out to 12-inch square.
  3. Crimp edges; place on prepared baking sheet.
  4. Spread pesto evenly over puff pastry.
  5. Sprinkle with 1/2 cup cheese; add tomato slices in a single layer.
  6. Finish by topping evenly with remaining 1/2 cup cheese.
  7. Bake 17 to 20 minutes or until golden brown.
  8. Garnish with fresh basil, if desired.
  9. For small bites, cut into 16 pieces.
  10. Serve immediately.
