Italian-Style Beef and Mushroom Soup
- 1 lb. (450 g) extra-lean ground beef
- 1 onion, chopped
- 5 cloves garlic, minced
- 1/2 lb. (225 g) sliced fresh mushrooms
- 1 can (28 fl oz/796 mL) diced tomatoes, undrained
- 2 cups 25%-less-sodium beef broth
- 1 tsp. Italian seasoning
- 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- 2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
- Brown meat with onions and garlic in large saucepan on medium-high heat.
- Add mushrooms; cook 5 min.
- or until mushrooms release most of their liquid, stirring occasionally.
- Add tomatoes, broth and seasoning; stir.
- Bring just to boil; simmer, partially covered, on medium-low heat 20 min.
- Remove from heat.
- Stir in dressing and cheese.
