Greek Chicken With Cherry Tomatoes and Feta
- 2 cups cherry tomatoes, halved
- 12 cup of fresh mint, thinly sliced
- 12 cup crumbled feta cheese
- 13 cup kalamata olive, roughly chopped
- 3 teaspoons olive oil
- 12 teaspoon sea salt
- 12 teaspoon pepper
- 4 boneless skinless chicken breasts
- In medium bowl, combine tomatoes, mint, feta, olives, 1 teaspoon oil, half the salt and half the pepper.
- Let stand until ready to serve.
- Sprinkle chicken with remaining salt and pepper.
- In large skillet, add remaining oil.
- Add chicken and cook, turning once, for 5-6 minute per side or until no longer pink.
- Serve with tomato mixture.
