Pimiento Cheese-Stuffed Celery Ribs

  1. In a medium bowl, combine all ingredients (except celery) to a smooth paste.
  2. Spoon two tablespoons of the mixture into each celery rib.
  3. Arrange on a dish.
  4. Cover tightly with plastic wrap.
  5. Refrigerate for 2 hours, or until the flavors blend.
  6. To serve, cut each celery rib into 8 pieces.
