Poached Pears & Custard Recipe

  1. Combine 1 1/2 c. sugar, 2 1/2 c. water, juice of 1 lemon and 1/2 vanilla bean in deep skillet.
  2. Bring to boil, stirring till sugar is dissolved.
  3. Add in 4 to 5 peeled, halved and cored pears, and simmer till tender (15 to 20 min), turning several times.
  4. Let cold in syrup.
  5. Combine 1/4 c. sugar, 1 1/2 Tbsp.
  6. cornstarch and 2 egg yolks in top of double boiler, and beat till light.
  7. Whisk in 1/2 c. each of lowfat milk and cream; place over simmering water and stir till mix begins to thicken.
  8. Whisk vigorously till smooth and thick; then remove from heat.
  9. Stir in 1 Tbsp.
  10. Grand Marnier liqueur and cover with wax paper.
  11. Let cold.
  12. TO ASSEMBLE: Cover bottom of serving dish with custard.
  13. Drain pears on paper towels and place on custard (cut side down).
  14. Combine 1/2 c. sugar and 2 Tbsp.
  15. water in small saucepan and bring to boil till sugar is dissolved.
  16. Cook over medium-high heat till syrup turns light golden.
  17. Thicken slightly ad pour over pears and custard in thin threads to garnish.
  18. Sprinkle with 1/4 c. toasted, sliced almonds.
  19. Serves 4 to 5.
