Bacon & Jalapeno Mac-n-Cheese
- 3 strips Bacon
- 10- 1/2 ounces, weight Elbow Macaroni Noodles
- 1 cup Whole Milk
- 4 Tablespoons Butter, Divided Use
- 6 ounces, weight Processed Cheese (Velveeta Or Similar), Cubed
- 1 cup Shredded Mexican Blend Cheese
- 1/4 teaspoons Nutmeg
- 1/4 teaspoons Cayenne Pepper
- 1/4 teaspoons White Pepper
- 1 whole Jalapeno Pepper, Stem Removed
- 1/2 cups Italian Bread Crumbs
- 1/4 cups Cojita Cheese

- In a pan fry bacon over medium heat until crispy.
- Remove from the pan and let cool on paper towels, then crumble into small peices.

- Follow directions on package to cook macaroni.
- Once done drain water and return macaroni to pan.

- Add milk, 3 tablespoons butter, cheeses (Velveeta and Mexican blend), and spices to pan.
- Cook on low heat.
- 4.
- In a separate pan heat 1 tablespoon butter.
- Remove stem and seeds from jalapeno.
- Add to pan and saute until tender.
- Remove from heat and set a side.
- 5.Heat oven to 350 degrees F. Once all cheese is melted into the macaroni remove from heat.
- Place 6 ramekins onto a baking sheet, divide macaroni between the ramekins.
- Top each with jalapeno and bacon peices.
- In a bowl combine bread crumbs and cojita cheese.
- Sprinkle mixture over each of the ramekins.
- Bake in oven for about 10-12 minutes until golden brown.
- Remove from oven and cool before serving.
