Spinach & White Bean Dip
- 1 tablespoon olive oil
- 1 large onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, finely chopped
- 1/2 teaspoon fennel seeds
- 2 x 400 g cans cannellini beans, rinsed and drained
- 50 g baby spinach leaves
- 125 g PHILADELPHIA Cream Cheese, softened
- 1 tablespoon lemon juice
- salt and pepper, to taste
- Extra oil, for drizzling
- Blanched vegetables, to serve
- Lavosh, to serve
- HEAT oil in a heavy based saucepan, add onion, garlic and fennel and cook for 56 minutes until onion has softened.
- ADD the beans and spinach and cook a further 23 minutes.
- Remove from heat and allow to cool slightly.
- PROCESS the bean mixture, PHILLY, lemon juice and seasonings until smooth.
- Spoon the dip into a serving bowl, drizzle with extra oil and serve with blanched vegetables and lavosh.
