Puerto Rican Rice and Beans
- 1 can Pink Beans or Red Kidney Beans
- 1/2 tsp Adobo Seasoning
- 1/2 tsp garlic powder
- 1 packages sazon con azafran seasoning
- 2 tbsp sofrito sauce
- 2 sausages
- 2 russet potatoes
- 1 1/2 cup white rice
- 1 tbsp flax seeds (meal) optional
- Cook white rice to instructions.
- Cook sausages to instructions and dice into squares when finish.
- Boil potatoes for 50 minutes at 375F or #6 on your stove.
- Dice into square when finish.
- Drain pink beans and set aside the liquid.
- The liquid will be used for the sauce.
- Add pink beans to the pan and add half the liquid from the can and cook at 235F or #2 for 3 minutes.
- "You can add a little more of the liquid if you like more sauce with your meal"
- Add sofrito sauce, sazon con azafran seasoning, garlic powder, and adobo seasoning.
- Stir and cook at 270F or #3 for another 3 minutes.
- Add sausage and potatoes and stir.
- Let it simmer for 5 to 10 minutes and serve over white rice.
- "You can add flax seeds to thicken the sauce or if you just want to add some fiber."
