Baked Brie with Braised Cabbage
- 7 ounces, weight Brie (4 Pieces Of 50 Grams)
- 24 slices Pancetta (thin)
- 1-78 ounces, weight Unsalted Butter
- 1 Tablespoon Olive Oil
- 1 whole Onion, finely chopped
- 1 clove Garlic, Grated
- 1 whole Granny Smith Apple, Grated
- 1 pound, 1-23 ounces, weight Savoy Cabbage, Finely Sliced

- Preheat the oven to 22o degree C.
- 2.
- Cover the pieces of brie with as much of the pancetta as you need to cover the brie entirely.
- Place them in the freezer for 10 minutes and then place on a baking tray.
- 3.
- Bake them in the oven for 6-8 minutes or untill the pancetta is crispy.
- 4.
- Cut the remaining pancetta in fine strips.
- Melt the butter and oil on medium heat and add the finely chopped onion and the pancetta and fry for 2-3 minutes.
- 5.
- Add the garlic and the apple (grated) and stir for 1 minute.
- 6.
- Now add the finely sliced savoy cabbage and fry for another 5-6 minutes.
- Season to taste with salt and pepper.
- 7.
- Divide the cabbage over 4 plates and place the piece of brie on top.
- Drizzle with some olive oil and serve with homemade bread.
