Jo's Crab Soup
- 5 lbs imitation crabmeat
- 3 quarts whole milk
- 1 quart heavy cream
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons Old Bay Seasoning
- 1 green pepper, chopped
- 1 large onion, chopped
- 1 cup Chardonnay wine
- 1 cup flour
- 14 cup butter, melted
- Saute green pepper and onions in Chardonnay.
- Add milk and heavy cream.
- Add crab meat, pepper and Old Bay Seasoning.
- Cook on low until soup begins to bubble, constantly stirring to prevent burning.
- Mix butter and flour together.
- Add a little at a time to thicken soup until it is the consistency you desire.
