Mapo Cellophane Noodles for Vegetarians

  1. In a frying pan with heated sesame oil, add the atsuage and Chinese chives, in that order.
  2. Fry until browned.
  3. Flip over the atsuage and Chinese chives.
  4. Mix the ingredients marked with a , then add them to the pan together with the ginger and simmer.
  5. Add the noodles without rehydrating them first!
  6. Stir while simmering.
  7. It's finished when the noodles have rehydrated.
