Mapo Cellophane Noodles for Vegetarians
- 1 pack Atsuage (cut into bite sized pieces)
- 30 grams Cellophane noodles
- 1 tbsp Sesame oil
- 1/2 bunch Chinese chives (cut into 3 cm pieces)
- 1 knob Ginger (minced)
- 1/2 tbsp Miso
- 1 tbsp Soy sauce
- 1 tsp Sugar
- 1/2 tsp Doubanjiang
- 1 tsp Rice vinegar
- 150 ml Water
- In a frying pan with heated sesame oil, add the atsuage and Chinese chives, in that order.
- Fry until browned.
- Flip over the atsuage and Chinese chives.
- Mix the ingredients marked with a , then add them to the pan together with the ginger and simmer.
- Add the noodles without rehydrating them first!
- Stir while simmering.
- It's finished when the noodles have rehydrated.
