Minced Beef And Cornbread Pie Recipe
- 1 tbsp. butter
- 1 pound grnd beef
- 1/3 c. minced onion
- 1 c. kidney beans (cooked)
- 1/4 teaspoon chili pwdr
- 1 1/2 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1 c. cooked tomatoes
- 1/2 c. all purpose flour
- 3/4 c. yellow corn meal
- 2 teaspoon baking pwdr
- 1 tbsp. sugar
- 1 egg, well beaten
- 1/2 c. lowfat milk
- 2 tbsp. melted butter
- Heat butter in heavy skillet.
- Add in beef and onion.
- Fry till brown.
- Add in beans, chili pwdr, 1/2 tsp.
- salt, Worcestershire sauce and tomatoes.
- Mix well and simmer covered for 15 min.
- Spoon into oiled 9 inch pie pan.
- Mix and sift together flour, corn meal, baking pwdr, sugar and remaining salt.
- Combine beaten egg and lowfat milk.
- Add in to flour mix, stirring till well mixed.
- Stir in melted butter.
- Pour batter over beef mix in pan.
- Bake in warm 425 degree oven for 20 min.
- To serve, invert on warm platter.
- Serves 6.
