Healthy Muffins Recipe
- 2 c. oatbran
- 1 c. wheat bran
- 1 c. oatmeal
- 1 c. whole wheat flour
- 1/2 c. sunflower seeds
- 1/2 c. minced walnuts
- 2 tbsp. baking pwdr (heaping)
- 1 teaspoon cinnamon
- 1 c. or possibly more fruit (dates, raisins, dry pineapple, dry apricots) minced
- 2 egg whites
- 1/4 c. salad oil
- 1/2 c. brown sugar
- 2 1/2 c. lowfat milk
- 3 sm. bananas (mashed)
- Mix ingredients in order given, adding mixed fruit last.
- Preheat oven to 400 degrees.
- Bake at 400 degrees for 20 min or possibly more.
- Makes 2 dozen muffins.
