Smothered Cabbage

  1. Heat the vegetable oil in a heavy pot over medium high heat.
  2. Add the sliced bacon, onion and carrots.
  3. Cook for 7-10 minutes.
  4. Add the cabbage, beef stock, salt pepper, crushed red pepper, cayenne pepper, sugar and apple cider vinegar.
  5. Bring the mixture to a boil.
  6. Cover the pot with a lid and cook on a low to medium temperature and cook for 30-35 minutes.
  7. Stir occasionally.
  8. Take the lid off of the pot and return the heat to medium high heat.
  9. Cook an additional 5 minutes to allow some of the stock to evaporate from the cabbage.
  10. Serve while hot.
