kaylas mint chocolate cupcakes
- 1 3/4 cup flour
- 2 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 cup butter(mine was salted)
- 1/2 cup oil
- 2 large eggs
- 1 cup strong hot coffee
- 1 cup buttermilk(see instructions for substitute)
- 3/4 tsp salt
- 1 tbsp vanilla
- 3 or 4 drops peppermint oil depending on how much u like mint..remember a little goes a long way
- preheat oven 350F
- for butter milk put 1tbs vinegar or lemon juice in a cup of milk stir let sit 5 minutes
- cream together butter sugar eggs and vanilla
- wisk together dry ingredients and add them to butter mixture add in butter milk and coffee..add about 5drops peppermint oil stir well
- add into cupcake papers in a cupcake pan about 3/4 of the way full
- bake 20-23 min.or until toothpick comes out clean
- I decorated with my cream cheese icing chocolate covered candies and Andes candies
