Grilled Cajun Chicken Salad

  1. Rub chicken breasts evenly with Cajun seasoning.
  2. Grill over medium-high heat 3 to 4 min.
  3. on each side or until chicken is browned on both sides and cooked through (170F).
  4. Set aside.
  5. Mix romaine and radicchio in large bowl.
  6. For each serving: Place 2-1/2 cups of the romaine mixture on serving plate.
  7. Slice 1 chicken breast; arrange over salad.
  8. Top with 1/2 cup of the Spicy Pecan Halves, 2 Tbsp.
  9. of the raisins, 1 Tbsp.
  10. of the onions and 3 Tbsp.
  11. of the dressing.
  12. Or, spoon dressing into small pitcher and serve on the side.
