Grilled Cajun Chicken Salad
- 50 each small boneless skinless chicken breasts
- 2 cups Cajun seasoning
- 6-1/4 gal. romaine lettuce, torn
- 1-1/2 gal. radicchio, torn
- 1-1/2 qt. raisins
- 3-1/4 cups green onions, chopped
- 2-1/4 qt. KRAFT Blue Cheese Dressing, Spoonable
- Rub chicken breasts evenly with Cajun seasoning.
- Grill over medium-high heat 3 to 4 min.
- on each side or until chicken is browned on both sides and cooked through (170F).
- Set aside.
- Mix romaine and radicchio in large bowl.
- For each serving: Place 2-1/2 cups of the romaine mixture on serving plate.
- Slice 1 chicken breast; arrange over salad.
- Top with 1/2 cup of the Spicy Pecan Halves, 2 Tbsp.
- of the raisins, 1 Tbsp.
- of the onions and 3 Tbsp.
- of the dressing.
- Or, spoon dressing into small pitcher and serve on the side.
