Zucchini Ragout

  1. Heat an 8-quart saucepan over medium heat with olive oil.
  2. Add the onion and garlic, and sweat for 2 minutes.
  3. Add the peppers and saute for 10 minutes.
  4. Add the tomatoes and zucchini, and cook down for 10 more minutes.
  5. Add the vinegar and simmer for 2 more minutes.
  6. Check seasonings and remove from heat.
  7. Add the basil and serve.
