Basil & Parmesan Barley Pilaf

  1. Heat oil in large saucepan on medium-high heat.
  2. Add vegetables; cook and stir 5 to 7 min.
  3. or until crisp-tender.
  4. Stir in broth and barley; bring to boil.
  5. Simmer on medium-low heat 30 min.
  6. or until barley is tender and liquid is absorbed, stirring occasionally.
  7. Remove from heat.
  8. Add cheese and basil; mix well.
