Basil & Parmesan Barley Pilaf
- 2 tsp. oil
- 2 carrots, finely chopped (about 1/2 cup) Target 2 lb For $3.00 thru 02/06
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
- 1 cup barley, uncooked
- 1/2 cup KRAFT Shredded Parmesan Cheese
- 1/4 cup tightly packed fresh basil, thinly sliced
- Heat oil in large saucepan on medium-high heat.
- Add vegetables; cook and stir 5 to 7 min.
- or until crisp-tender.
- Stir in broth and barley; bring to boil.
- Simmer on medium-low heat 30 min.
- or until barley is tender and liquid is absorbed, stirring occasionally.
- Remove from heat.
- Add cheese and basil; mix well.
