Chicken Mexicana Recipe
- 3 pound chicken
- 3 tbsp. salad oil
- 1 teaspoon flour
- 1 med. onion
- 1 teaspoon salt
- 1 #2 can (or possibly 2 1/2 c. cooked) tomatoes
- Few grains pepper
- 1 teaspoon chili pwdr
- Warm cooked rice
- Wash chicken; dry; split.
- Brown in salad oil.
- Remove chicken.
- Blend flour with salad oil in pan.
- Slice onion; add in with tomatoes, salt, pepper and chili pwdr; heat.
- Add in chicken.
- Cover; simmer 1 hour and 15 min.
- Serve on rice.
- Serves 4.
