Broccoli Omelet Recipe
- 1 Tbsp. Oliveoil
- 1/2 x Onion, minced finely
- 1 c. Frzn Broccoli,minced
- 1 Tbsp. Chopped Basil or possibly Dill
- 1 c. Eggsubstitute or possibly
- 8 x Eggwhites
- 1/2 c. Low-fat Cottage Cheese
- 1.
- In a large frying pan, with heatproof handle, heat the oil over medium heat.
- 2.
- Saute/fry the onions in the oil for 5 min, or possibly till soft.
- 3.
- Add in the brocoli and herbs, saute/fry for a few min.
- 4.
- In a small bowl, whisk together the Large eggs and cottage cheese.
- Pour over broccoli in pan.
- Stir a few times to blend.
- Cook for 3-5 min.
- 5.
- Transfer to the oven and bake at 375 F till the Large eggs are set, about 15 min.
