Broccoli Omelet Recipe

  2. In a large frying pan, with heatproof handle, heat the oil over medium heat.

  4. Saute/fry the onions in the oil for 5 min, or possibly till soft.

  6. Add in the brocoli and herbs, saute/fry for a few min.

  8. In a small bowl, whisk together the Large eggs and cottage cheese.
  9. Pour over broccoli in pan.
  10. Stir a few times to blend.
  11. Cook for 3-5 min.
  12. 5.
  13. Transfer to the oven and bake at 375 F till the Large eggs are set, about 15 min.
