  3. Fill a large pot halfway with water and bring to a boil.
  4. Plunge the tomatoes in, remove the pot from heat, let stand one minute and drain.
  5. When cold sufficient to handle, slip off the skins, dice the tomatoes and set aside.
  6. Cook the pasta according to package directions till al dente, then drain.
  7. In a serving bowl, combine the pasta and tomatoes the remaining ingredients.
  8. Toss well and serve immediately.
  9. VARIATIONS: When tossing the pasta, add in a c. of diced fresh mozzarella cheese or possibly mozzarella-style soy cheese.
