Poached Apricots and Almonds with Philly dollop
- 1 cup water
- 1/2 cup caster sugar
- 1 cinnamon stick
- 1 teaspoon cloves
- 1 large jar (700g) good-quality whole apricots
- 1/4 cup (40g) slivered almonds, toasted
- Philly Dollop
- 125g PHILADELPHIA Light Cream Cheese or PHILADELPHIA* Cream Cheese, softened
- 1 tablespoon vanilla sugar
- 1 tablespoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- Combine water, caster sugar, cinnamon stick and cloves in a medium sized saucepan over high heat until sugar has dissolved.
- Bring to boil; reduce heat; and simmer, uncovered, for 20 minutes or until reduced by half.
- Add apricots and simmer until heated through.
- Remove to serving plate.
- Top with toasted almonds, a dollop of Philly* and drizzled with syrup.
- Philly Dollop: Combine all ingredients until smooth.
