Poached Apricots and Almonds with Philly dollop

  1. Combine water, caster sugar, cinnamon stick and cloves in a medium sized saucepan over high heat until sugar has dissolved.
  2. Bring to boil; reduce heat; and simmer, uncovered, for 20 minutes or until reduced by half.
  3. Add apricots and simmer until heated through.
  4. Remove to serving plate.
  5. Top with toasted almonds, a dollop of Philly* and drizzled with syrup.
  6. Philly Dollop: Combine all ingredients until smooth.
