Libby's Famous Pumpkin Pie
- 1 each pie shell (9 inch) unbaked
- 2 large eggs
- 1 can pumpkin puree (canned)
- 3/4 cup sugar granulated
- 1/2 teaspoon salt
- 1 teaspoon cinnamon ground
- 1/2 teaspoon ginger ground
- 1/4 teaspoon cloves ground
- 1 can evaporated milk
- Prepare pie shell.
- Preheat oven to 425 degrees F. Beat eggs lightly in large bowl.
- Stir in remaining ingredients in order given.
- Pour into pie shell.
- Bake for 15 minutes at 425 degrees F.
- Reduce temperature to 350F (180C).
- ; bake for 40 to 50 minutes or until knife inserted in center comes out clean.
- Cool on wire rack.
- Top with Reddi-wip.
